For Christmas presents this year, I made everyone I knew fingerless mittens.  I love to knit and crochet and I fell in love with handspun yarns.  Of course, my next thought was...  “why can’t I spin yarn?”...  much to my husband’s chagrin!&lt;br/&gt;&lt;br/&gt;I found some beautiful local wool (from some adorable sheep, I might add!), had my girls help me dye it with kool aid (not professional, I know, but it’s a start!), and spun it into some soft, spongy yarn.  This yarn hasn’t found a purpose yet, but I have already spun another wool top and knit a pair of fingerless mittens.  I’m hooked!  </description>

      <title>Mexican Tuna Salad--yum!</title>

      <description>This summer has been busy and very hot! It seems I don't quit sweating whether I am outside with the kiddos or inside making soap and candles. The last thing I want to do when everyone is complaining of hunger is make a warm house even warmer by using the oven or the stove.  Yes, it gets to that point sometimes where I forget everyone needs to eat--again!--didn't I just feed them?  I have found several summer salads that have become our staples. I blogged about a wonderful black bean salad that is still at the top of my list, but this is my current favorite. It is called Mexican Tuna Salad--sounds a bit boring, but it is a taste extravaganza (as my daughter would say =). Gather the ingredients below, mix well and enjoy! It is delicious with crackers, over a green salad, wrapped in a tortilla, or even with chips. It is healthy (minus the chips), very flavorful and has garnered thumbs up approval from all of my kids!&lt;br/&gt;&lt;br/&gt;2 packages tuna in water (drained)&lt;br/&gt;&lt;br/&gt;juice of 2-3 limes&lt;br/&gt;&lt;br/&gt;1 Tbl. cumin&lt;br/&gt;&lt;br/&gt;1 small onion, chopped&lt;br/&gt;&lt;br/&gt;1 tomato, chopped (preferable picked fresh from the garden!)&lt;br/&gt;&lt;br/&gt;1 large avocado, chopped&lt;br/&gt;&lt;br/&gt;1/4 c. olive oil (I have made it w/out and it was still delicious)&lt;br/&gt;&lt;br/&gt;1 handful cilantro, chopped&lt;br/&gt;&lt;br/&gt;1 jalepeno, chopped (optional)&lt;br/&gt;&lt;br/&gt;&lt;br/&gt;&lt;br/&gt;*Here’s an interesting link that discusses the safety and eco-friendliness of canned “light” tuna: click &lt;a href=&quot;http://www.edf.org/page.cfm?tagID=15731&quot;&gt;here&lt;/a&gt;.</description>
